  • ½ garlic, sliced quite big
  • ¼ chilli, broken
  • parsley, roughly chopped
  • olive oil, for cooking
  • tagliatelle
  • pasta cooking water, a little bit
  • butter, a nice knob
  • lemon, zest and juice
  • parmesan, grated

Preparation

  1. Step 1
    Slice half a large garlic clove quite big so it can be removed later. Break off about a quarter of a chilli. Roughly chop a little parsley.
  2. Step 2
    Heat a nice bit of olive oil in a pan. Add the sliced garlic and chilli. Let it sweat gently without burning to flavour the oil.
  3. Step 3
    When the pasta is nearly ready, drain it (reserving some cooking water) and add it to the pan. Stir, season lightly, and add a little pasta water.
  4. Step 4
    Add a nice knob of butter and let it melt to create creaminess. Squeeze in a little lemon juice (not too much). Add the chopped parsley and a little grating of parmesan (or pecorino if available).
  5. Step 5
    Use tongs to give everything another good stir. Add a touch more pasta water if needed for creaminess. Finish with lemon zest and an extra grating of parmesan on top.
